"Indian Trifle"!! New year dessert..

"Trifle" is an English dessert which is made with layers of sponge cake, fruits ,custard and other fancy ingredients!!Many variations are and can be done in making trifle. Loved by kids very much as it is not only attractive in looks but also very delicious in taste!!for more reference check:TRIFLE.



Here I am presenting my own Indian version of Trifle which is made with rice pudding/Kheer...












Ingredients:
This preparation is for 2 glass:
2 cups Kheer(home made)
1 cup dry fruits(almonds,cashew nuts, wall nuts, raisins)
few strands of saffron
1 cup Fresh fruits(strawberry, apple, banana)
2 tablespoon powdered sugar
50 grams dark chocolate
2 small /medium serving glass

Method:


Melt the chocolate in microwave bowl for 2 minutes(or few seconds more).
Apply this melted chocolate on the rim of both the glasses. Sprinkle powdered sugar on this and keep them in fridge.
soak the saffron strands in warm water and keep it aside.
wash and cut the fruits into small pieces and sprinkle powdered sugar on them too.Mix well.
Coarsely crush the dry fruits in a grinder.
roughly mash the kheer with help of a spoon .
In a bowl take 1 cup of kheer and add the saffron water into it.The kheer will get light yellow colour.
Now arrange the layers of all the ingredients one by one:
First add white kheer
Then a layer of dry fruits
Then a layer of yellow kheer
Then a layer of fruits.
Again a layer of white kheer.
And finally garnish wit dry fruits and strawberry
Keep these prepared trifle in fridge for about an hour or more to let them chill and set properly.
Indian trifle is ready!! enjoy

Optional notes:
Many variation in ingredients can be done in making this trifle.
One can also make this trifle using Rabdi!!
along with dry fruits and fruits one can also add strawberry/pineapple crush.

Vegetable Fried rice

 Oriental cooking comprises of dishes which are prepared in eastern Asiatic kitchens like: China,Japan, Thailand, Burma and Korea. Their recipes have a major portion of Rice, vegetables, Bamboo shoots, spring onions, sea foods and very less oil . They blend in the flavors of fresh spices and herbs like Coriander leaves, green onions, lemon grass, red and green chilies, Ginger, Black pepper ,sea salts. The Gravy of most of their  dishes are prepared with soy sauce, Vinegar, coconut ,sugar and sesame oil. "Vegetable fried rice" is one of more famous oriental dishes which is prepared at homes and restaurants. It is a very light and easy preparation. To the usual preparation, I added my touch with garam masala, as it not only increased aroma but taste and flavor too!! So try this new touch and enjoy this preparation with Vegetable manchurian !!

Ingredients:
1.5 cups rice
3 cups water
1 medium orange carrot
1 medium green capsicum
1 cup shredded cabbage
1 cup green onions (cut into small pieces)
1 medium onion
4-5 baby corns
1 teaspoon garam masala
1/2 teaspoon black pepper powder(kaali mirch)
1/2 teaspoon MSG(ajinomoto)
1 tablespoon Soy sauce
1 tablespoon white vinegar
salt according to taste
3 tablespoon vegetable oil/ olive oil
Method:


Wash and soak the rice for about 1/2 hour. Boil the rice with a teaspoon of oil, till they are cooked(takes about 15 minutes).
Cut all the vegetables into small pieces as shown above.
Heat oil in a  non stick kadahi(wok), add onion and saute it for 2 minutes till it turn transparent in colour. Add green onion and saute it for few seconds.
Now add Carrots, capsicum and cabbage and saute them too for a minute. Add the Ajinomoto,soy sauce and vinegar and mix well.
With help of a chopsticks or fork , separate the rice for avoiding any lumps and breaking of it.
Add it to the sauteed vegetables and mix well . Add the garam masala, black pepper and salt and mix them well too.
Healthy and tasty "Vegetable fried rice" is ready. Garnish with vegetables of your choice.


Optional notes:
I had used basmati rice for this recipe but small grained or brown rice can also be used for this.
One can add other vegetables of choice.
This is a very light cooking with nutritious vegetables and is thus good for People opting for low calorie food.

Corn and peas yellow Rice

This rice is made with corn and peas which not only gives a great taste but also a nice color to it.
The chaat masala  added to this increases the flavor of rice and gives it a tangy taste. One can make it as a tiffin meal too for kids. A great and quick to make recipe which you can enjoy with Green chutney and flavored curd/yogurt !!! 


This preparation will serve 3 persons
Ingredients:
1and 1/4cups of  white rice(prefer basmati)
1/2 cup boiled green peas
1/2 cup boiled corn kernels
1 medium size potato( cut into quarter pieces)
1 teaspoon cumin seeds(jeera)
1/4 teaspoon turmeric powder(haldi)
1/2 teaspoon garam masala
1/2 teaspoon black pepper powder(kaali mirch)
1 teaspoon chaat masala
salt according to taste
1 tablespoon ghee
Method:
Wash and soak rice for 1/2 hour.

In a pressure cooker, heat ghee and add jeera. When it starts to crack , add the peas, corn and potato. Saute them for few seconds.

Drain the water and add the rice with other ingredients and mix well.
Add 1 and 1/2 cup of water to this. Add all the seasonings except chaat masala. Stir well.
Seal the lid of the pressure cooker and let it cook. Will take one whistle on high and one whistle on low.
Sprinkle the chaat masala on the cooked rice.

Tasty Corn and Peas yellow rice is ready!! Serve hot.....
